Chocolate Pumpkin Bars

These pumpkin bars will be the ultimate fall treat—we haven’t found anyone who doesn’t love them. Full of fall flavor, these bars are fluffy, moist, and a crowd-pleasing dessert!

Ingredients
  • GATSBY Chocolate White PB Cups
  • 3 large eggs room temperature
  • 1 cup coconut sugar
  • 1 cup avocado oil
  • 1 (29 oz) can pumpkin puree
  • 2 cups almond flour
  • 1 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
Method
  1. In a large bowl, beat eggs, sugars, oil, and pumpkin together until combined.
  2. Add in flour, baking powder, baking soda, salt, and spices.
  3. Stir until combined
  4. Pour into prepared pan + add in pieces of GATSBY White Chocolate PB Cups
  5. Bake in preheated oven for 35-45 minutes
  6. Cool completely before frosting.
  7. Top off with more GATSBY White PB Cups
